Cauliflower Burgers

Servings: 12     Prep time: 20 min     Cook time: 30-35 min

Ingredients:
– ¾ cup uncooked quinoa
– 1 head cauliflower (about 6 cups florets)
– 3-4 tablespoons oil, divided
– a few generous shakes of spicy seasoning (cumin, chili powder, cayenne, etc)
– ½ teaspoon garlic salt / 1 or 2 minced garlic clove
– ¾ cup breadcrumbs or ground almonds
– ¾ cup shredded Pepperjack cheese
– 3 eggs
– 1½ teaspoon salt
Burger Toppings
– a few good squeezes of lime juice
– ½ cup chopped cilantro
– ½ cup chopped purple cabbage
– avocado
– chipotle mayo

Directions:
1. Preheat oven to 400°F.
2. Cook the quinoa according to the box instructions.
3. Cut and place cauliflower in the oven with a smidge of olive oil, salt and pepper for 15 minutes or until cooked.
4. Blend cauliflower into a mush in food processor.
5. Mix all ingredients in a large bowl and form into patties.
6. Bake in the oven for 20 minutes.
7. Fry in pan to give a golden glow.
8. Serve on a bun of your choice with the toppings and enjoy!
