Slow Cooker Veggie Chili
This family classic will make even the most resilient carnivores consider changing their diets for the veggie inclined alternative.
Ingredients
-1 can black beans, drained
-1 can chickpeas, drained
-1 can vegetarian baked beans
-1 large can crushed tomatoes
-1 large can corn kernels
-1 large white or red onion, diced
-1 large green bell pepper, diced
-1 large carrot, sliced thinly
-3 cerely stalks, chopped
-2 garlic cloves, minced
-1 1/2 tbsp chilli powder
-1 tsp oregano
-2 tbsp basil, minced
-salt and pepper
Prep time: 10 min
Cook time: 2h +
Serves: 6-8 ppl
Place all ingredients in slow cooker. Cook covered at high heat for 2 hours, stiring every half hour or so. Serve hot with cheese and sour cream as toppings.
P.S. Mix a tub of sour cream, 1/4 cup of chopped basil, one clove of minced garlic, 1/2 cup of parmesan and salt & pepper for a topping that will make your mouth water every time.
