Best Cafe-Style Cookies

I’ve always loved baking, but I’ve struggled for years to find the perfect cookie recipe. My ideal cookie is one that’s medium-sized (about the size of my palm), and perfectly chewy yet also soft. After endless searching, I can safely say that I’ve finally found the perfect cookie recipe. These are just the right texture, and the taste is unmatched: rich and caramel-y, with just enough chocolate chips. The secret? Refrigerating the dough. This creates that café-style consistency I’ve been searching for, but more importantly, allows the flavours to get stronger. If you’ve been looking for the perfect cookie recipe, look no further!

Ingredients:

  • 2 cups + 2 tablespoons all purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cornstarch
  • 1 teaspoon salt
  • 1 ½ sticks butter, melted and cooled
  • 1 cup dark brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups dark chocolate chips

Instructions:

In a big bowl, beat the melted butter and sugars for about a minute before mixing in the eggs and vanilla extract. In a separate medium-sized bowl, combine the dry ingredients. Slowly add these dry ingredients to the butter mixture and mix just until no lumps remain. Mix in the chocolate chips.

Cover and refrigerate for 30 minutes to an hour. Then, preheat the oven to 350F and bake ¼ sized rounds for 10-14 minutes, or until the edges are golden and the centers are still soft.

Let them cool (if you can wait) and enjoy!
